There's just something about a good slice of pie; when the crust is executed perfectly, the filling is moist and sweet and cool whip is readily available.
This time of year is when I start pulling stuff out of the freezer.
Picking berries and pumpkins at their peek and storing them in "pie sized" servings in the freezer is a task I never tire of.
Sure, I can run to the market and buy frozen or canned fruit or pumpkin.
But for me, there is something so satisfying about going to the freezer, on a cold day, and pulling out a bag of berries or pumpkin from my garden, prepared at it's peek.
I set the bag out to thaw as I mix flour and shortening, rest and roll. Lining a pie dish with a perfectly executed crust is both physically and mentally satisfying. It's hard to think of a more satisfying way to spend a cold afternoon at home.
Once you get your crust just right, in goes the provisions (I stored away on a sunny day for a cold afternoon just like this). Right into the oven and then just wait. Before you get the dishes done someone will start buzzing about the smell, the smell of crust crisping, berries caramelizing and/or custard stiffening.
Yes, I do enjoy a good pie.
